HOECAKE 
2 c. self-rising flour
1/4 c. vegetable oil
1 c. milk
Water (if needed)
2 to 3 tbsp. vegetable oil

Mix flour with oil and milk (and water, if needed) to make a batter of medium thick consistency. Add 2 to 3 tablespoons vegetable oil to well seasoned iron frying pan (10 inch frying pan) and heat in hot oven until oil is very hot. Add batter. Reduce oven to 425 degrees and cook until hoecake becomes brown on the bottom and firm in the middle. Remove hoecake and flip so top can become brown. The bread takes about 30 to 45 minutes to bake. Cut bread in wedges and serve hot with butter.
