GREEK BREAD | |
1 pkg. yeast 2 c. lukewarm water 1 tbsp. honey 1 tsp. salt 1 tbsp. salad oil or lard 4 1/2 - 5 c. all purpose flour 1 egg white Pour yeast into water with honey and salt. Cover and let stand 10 minutes. Add oil, stir and put into large bowl. Gradually add flour, mixing well. Knead on floured surface for 5 minutes. Place in greased bowl in warm place. Punch down after 2 hours. Knead and shape into 2 round loaves. Place on greased baking sheet. Cover and let rise until double, 1 to 1 1/2 hours. Brush with egg white. Cut criss cross on top of loaves with sharp knife. Bake at 425 degrees for 30 minutes. Reduce to 350 degrees, bake 20 to 30 minutes more. Place pan of water on lower rack when baking bread. Serves 12. |
