ZESTY SQUASH AND ZUCCHINI
CASSEROLE (MICROWAVE)
 
1/4 c. butter
1 lg. clove garlic, peeled and crushed
1/2 tsp. salt
1/8 tsp. pepper
1 tsp. dried oregano leaves
1/2 tsp. dried sweet basil leaves
1 lg. yellow summer squash, cut into 1/4 inch slices
2 sm. zucchini, cut into 1/2 inch slices
1 lg. onion (16 pieces)
1 c. thinly sliced fresh mushrooms
1 lg. fresh tomato cut into eighths

Place butter, garlic and seasonings in a deep, 2 1/2 quart, heat resistant, non metallic casserole. Heat uncovered, with Microwave energy 1 minute. Mix melted butter and seasonings until blended.

Add sliced squash, zucchini, onions and mushrooms to seasoned butter mixture. Cover tightly and heat in Microwave Oven 8 minutes. Add tomatoes and heat an additional 6 minutes or until vegetables have reached desired degree of doneness.

Since microwave ovens vary in power, you may need to adjust your cooking time.
