ZESTY SQUASH AND ZUCCHINI
CASSEROLE (MICROWAVE)
 
1/4 c. butter
1 lg. onion, chopped
1/2 tsp. salt
1/8 tsp. pepper
1/2 tsp. parsley flakes
1/2 tsp. dried sweet basil leaves
1 lg. summer squash cut in 1/4 inch slices
2 sm. zucchini cut in 1/2 inch slices
1/4 c. catsup

Chop onion and mix with butter. Cook 4 minutes on high. Combine salt, pepper, parsley and basil with onions and stir well. Add summer squash and zucchini. Stir with onion, oil and spices. Cook 8 minutes on high, covered. Add catsup, stir, and return to cook for 6 minutes or until done.

Since microwave ovens vary in power, you may need to adjust your cooking time.
