ZUCCHINI SQUASH CASSEROLE 
2 lbs. zucchini squash
1 large onion

Cook together until tender and drain.

1 carton (8 oz.) sour cream, mix with above
1 can cream of chicken soup
1 jar pimento, chopped
1 stick of butter, melted
1 box cheese croutons

Mix 1 stick butter (melted) and pour over 1 box of cheese croutons. Put half of croutons in bottom of casserole. Pour all other mixed ingredients over croutons, then use remaining croutons on top and bake t 350 degrees until brown.
