ZUCCHINI SQUASH CASSEROLE 
3 lg. zucchini
1/2 med. onion
butter for frying
3 tbsp. flour
1/3 c. milk
1 c. grated white Cheddar
Grated Parmesan cheese
Italian bread crumbs

Grate the zucchini (unpeeled) and the onion. Saute these vegetables in some butter. When the juice begins to cook out of the squash. Sprinkle the flour over the top. Add the milk and stir until thickened. Add the Cheddar and seasonings, mix well, and pour into a greased casserole dish. Sprinkle with the Parmesan cheese and the bread crumbs. Bake in a preheated 375 degree oven for 30-45 minutes. Serves 6.
