ZUCCHINI SQUASH CASSEROLE 
4 c. sliced zucchini
2 tbsp. butter
1 c. cream sauce seasoned with
1/2 c. Parmesan cheese
1/2 tbsp. Italian seasoning in
1 (8 oz.) can tomato sauce

Saute and steam salted squash slices in butter until tender. Place in greased casserole and pour seasoned tomato sauce over it. Pour cream sauce over this. Bake 25 minutes at 350 degrees.

Optional: 6 thin slices of onion and/or tomato before adding cream sauce.

CREAM SAUCE:

2 tbsp. butter
2 tbsp. flour
1 c. milk
Salt & pepper to taste

Melt butter in skillet; remove from heat and add flour. Stir until smooth. Add milk and heat over low heat until it thickens. Remove from heat; add Parmesan cheese.
