CUBAN BLACK BEANS AND RICE 
2 cans black beans
1 tsp. garlic
1 tsp. cumin
1/4 c. chopped onion
1 tsp. olive oil
1 can chopped Rotel tomatoes
1 bay leaf
2 (5 oz.) pkg. Vigo yellow rice (Spanish flavor)

Saute onion in olive oil until clear. Combine remaining ingredients; simmer 30- 60 minutes. Serve over Vigo brand yellow rice; follow package instructions. 4-6 servings.

For homemade Cuban beans you need a tsp of sugar and a tsp of vinegar. You want to use real garlic not powder and it does not have tomatoes or is served over yellow rice. Bush black beans is the closest beans in a can I have had to the real thing. Everything else sounds ok.. but please do not serve over yellow rice, ..so not Cuban

We just love this recipe. I use the low salt version of canned ingredients because the rice has so much salt. I put cooked rice in casserole dish, beans on top, then sprinkle with cheddar cheese and stick in toaster oven for a few minutes. EXCELLENT!
