CHEESE & SAUSAGE CHOWDER 
3 tbsp. butter
1 c. chopped carrots
1 c. chopped celery
1/3 c. chopped onion
3 tbsp. flour
2 c. water
1/2 tsp. salt
1/2 tsp. celery salt
1/4 tsp. paprika
1/8 tsp. pepper
12 oz. corn & peppers
2 1/2 c. sharp cheese
1 lb. link sausages, cut up
14 1/2 oz. can evaporated skim milk

Heat first 4 ingredients until bubbly; reduce heat, cover, and simmer for 20 minutes. Stir in flour, cook over low heat, stir constantly until bubbly.

Stir in all but cheese and sausage, cook on medium; stir in cheese gradually; cook and stir until melted; stir in sausage and parsley. Heat. Serves 4.
