CUBAN BLACK BEANS 
1 lb. black turtle beans
1 c. onion, chopped
1 clove garlic, chopped
3 (or more) green peppers, chopped
1 tsp. cumin seed
Salt, pepper, and Tabasco sauce to taste

Prepare beans as instructed on package (for quick-cook type, cover with water; bring to boil; let stand for 1 hour; boil for 30 minutes; simmer to taste). Fry onions, peppers and garlic until golden in any mild fat; add to beans. Add seasonings. Cook at least 2 hours. Serve as a main dish on white rice. In Cuba this dish accompanies roast pork and a garnish of banana chips, or Fritos is added.
