PEANUT BUTTER ROLL | |
3 c. sugar 1/4 c. plus 2 tbsp. water 1/4 c. plus 2 tbsp. white syrup 3 egg whites, stiffly beaten XX sugar Mix sugar, water and syrup. Stir over low heat until sugar is melted. Then bring to a rapid boil and cook until hard boil stage. Remove from heat and pour over stiffly beaten egg whites. Continue beating until mixture can be handled as dough. May add XX sugar here. Pour out on wax paper on a board which has XX sugar on it and on rolling pin. Divide into 3 balls. Roll 1/4 inch thick. Spread with peanut butter which is room temperature or thinned with a small amount of melted butter. Roll as jelly roll on the wax paper and XX sugar. Roll up and let stand until cool. Then slice to desired thickness. Store in a covered box. |
