PEANUT BUTTER ROLL 
3 c. white sugar
1 c. white corn syrup
1 c. boiling water

Cook sugar, syrup and water while stirring. Cook until it forms soft ball in water - let cool.

1. Beat egg white with mixer until you have a high peak.

2. Pour cooked syrup slowly over egg white while beating with mixer on medium speed.

3. Work with hands using powdered sugar (like flour) to form soft dough. Roll out on board (thin), spread peanut butter on the dough an carefully roll up like a jelly roll.

4. Let set for 10 or 15 minutes. Slice and store in refrigerator in tins until ready to serve.

I LOVE IT! I cooked the syrup to 243°F and this turned out perfect. I should had added a little powdered sugar to the peanut butter to make it a bit thicker. When I cut it, it smeared everywhere. Next time I make this I will use the kitchen table. It made a huge batch! PERFECT RECIPE!! Thanks for sharing.
