SPAGHETTI SAUCE FOR CANNING 
1/2 bushel tomatoes
3 lb. chopped onions
4 green peppers
3 hot peppers
1 garlic bud

Cook this over low heat in a heavy bottomed pan (a thin pan will scorch) for 1 1/2 hours or until thickened, stirring often. Then add:

1 c. sugar
1/2 c. salt
1 tbsp. oregano
1 tbsp. basil
4 tbsp. Italian seasoning

Cook 45 minutes to 1 hour. Ladle into pint jars and seal.

Process in a boiling water bath canner for 45 minutes.

This recipe made my house smell like a pizzaria! This is a great sauce. It did take much longer to cook and I increased the heat to medium high. It made about 10 quarts.
