PINEAPPLE FILLED COOKIES 
1/2 c. shortening (soft)
1 c. sugar
2 eggs
2 tbsp. thick cream
1 tsp. vanilla
2 1/2 c. sifted flour
1/4 tsp. baking soda
1/2 tsp. salt

Filling: Cook until thick (stir) and then cool: 1 cup sugar, 1 can crushed pineapple, 3 tablespoons butter, 1/4 cup lemon, 1/4 teaspoon nutmeg, and 1/4 cup flour.

Cream sugar and shortening; add sugar, cream, vanilla, salt, and soda. Mix well and add flour; mix well on lightly floured board. Cut in rounds or suitable shape. Place 1 cookie on lightly greased cookie sheet. Place rounded teaspoonful of filling on each cookie. Place another cookie on top and press down edges. Bake until delicately brown at 400 degrees for 8 to 10 minutes.
