BANANA CUPCAKES 
2 c. flour
1 tsp. baking soda
1 tsp. baking powder
3/4 tsp. salt
1 1/3 c. sugar
2 eggs, unbeaten
1/3 c. shortening
1/2 c. sour milk
1 tsp. vanilla
1 c. mashed bananas
1/2 c. chopped nuts, optional

Note: Add 1 teaspoon vinegar or lemon juice to regular milk to sour.

Soften shortening and sift in dry ingredients. Add 1/4 cup of milk, the bananas and mix until all the flour is dampened. Beat 2 minutes. Add egg, nuts and remaining ingredients. Beat 1 minute longer. Turn batter into paper lined cupcake pan. Bake 375 degrees for 25 minutes (approximately).

If use cake flour makes lighter cupcakes.
