BANANA CUPCAKES 
2 c. sifted cake flour
1 1/2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
1/3 c. shortening
1 c. sugar
2 eggs
1 c. mashed bananas
2 tsp. grated orange rind

Sift together flour, baking powder, baking soda and salt. Beat the shortening, sugar, eggs, banana and orange rind at high speed on electric mixer for 2 minutes or until well blended. Add sifted dry ingredients and beat about 1 minute more.

Turn into paper cups inserted in muffin pan wells, filling them 2/3 full. Bake in moderate oven at 375 degrees for about 20 minutes or until cake tester inserted in center comes out clean.

Makes 18 cupcakes if muffin pan wells are 1/3 cup capacity.
