BANANA CUPCAKES 
3 bananas, mashed to make 1 1/2 cups
3 c. flour
3/4 tsp. baking powder
3/4 tsp. baking soda
3/4 tsp. salt
3/4 c. shortening
2 1/4 c. sugar
1 1/2 tsp. vanilla
3 eggs
6 tbsp. sour milk OR buttermilk

Beat shortening and eggs. Add sugar, vanilla, and milk. Add mashed bananas and the creamed mixture with the dry ingredients. Add 3/4 cup chopped nuts (if desired). Bake at 350 degrees for 20 minutes. Makes 3 dozen cupcakes.
