SAUSAGE STUFFING 
1 lg. chopped onion
1 (8 oz.) pkg. fresh mushrooms
Butter
1 lg. loaf bread
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. sage
1 tsp. poultry season
1 can chicken broth
1 pkg. sage sausage
1 can water chestnuts (opt.)
Chopped celery (opt.)
1/2 - 1 tsp. garlic

Saute chopped onion, mushrooms in 1 stick butter with garlic. Oven dry bread, then cut into cubes. Brown sausage in pan and drain fat. IN large bowl place bread cubes and sausage, pour over butter with onions, etc. Sprinkle over rest of spices. Pour on chicken broth and mix well. If too dry add more melted butter. Stuffs 12 pound bird.
