EASY GARLIC ZUCCHINI 
This makes a great dish for college students who can’t have a hot plate in their room, or for someone who only needs to cook for one. It’s great as a quick, simple side dish or even just a healthy snack.

1 small zucchini (1 to 1 1/2-inches in diameter)
1/4 cup water
1 1/2 tsp. garlic salt (works best) or 1 tsp. garlic powder
4 tbsp. grated Parmesan or shredded Mozzarella cheese

Note: For the Parmesan cheese, the powdered kind you put on pizza will work fine.

Slice zucchini into circles, with each slice about 1/8-inch thick. Place in microwaveable bowl with water. Add garlic salt (or powder), sprinkling evenly over zucchini. Cover and microwave on high power setting for about 1 minutes 30 seconds (check after a minute though, microwave times vary). Zucchini should be tender enough to skewer easily with a fork, but it shouldn’t be mush.

Drain water from zucchini, but keep zucchini in bowl. Add Parmesan or Mozzarella cheese, sprinkling evenly. Microwave for another 30 seconds. It helps when using dried Parmesan to leave a bit of the water in the bottom of the bowl for moisture.

Serves 1 or 2 depending on appetite. ^-^ Enjoy!
