EASY ZUCCHINI BREAD 
2 c. sugar
1 c. oil
3 eggs
3 c. flour
1/4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon (add to taste)
2 c. grated fresh zucchini
1 c. nuts
2 tsp. vanilla
Optional: 2 (1 oz. each) sq. semi-sweet chocolate

Mix ingredients together - in order! Bake at 350°F, 50 minutes.

2 cups chocolate chips may be substituted for chocolate squares. Great as muffins, too!

Makes 2 loaves.

I used white chocolate chips. I was hesitant because the bread was heavy but it was delicious. The staff at my office were trying to hide it from each other. I will definitely make it again. I am saving my shredded garden zucchini pre-measured for this recipe.

I didn't know that I was supposed to put the recipe into 2 pans, so mine took a long time to bake. Maybe more detail in the directions would be helpful. Still turned out okay.

After making this recipe, I'd have to say it is a bit heavy and the cooking time and temp makes the outside a tad over-cooked and the center a little under-cooked. I used only 1/2 cup oil and substituted the other 1/2 with unsweetened apple sauce. I didn't add the chocolate. I did use a pan liner and divided it into 2 loaf pans. The flavor was pretty good though. I added a little extra vanilla and cinnamon to it too.

Recipe was definitely easy, but needs to be updated to reflect the recipe needs to be divided and baked into two pans and nuts to be optional. Mine also took a long time to cook and was very dense, but still delicious.

Haven't tasted it yet, but at 2 inches in height, I'll just substitute zucchini for bananas in my time-tested banana bread recipe. (Darn!)

I think it's good but definitely a one pan recipe. I have bigger bread pans the the little loafs. It was good making this. One of my recipes I use for zucchini.
