EASY ZUCCHINI CUPCAKES OR BREAD 
3 eggs, beaten
2 c. zucchini, grated
1 c. salad oil
3 tsp. vanilla
3 c. flour
1 3/4 c. sugar
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1/2 c. nuts, chopped (optional)
1 tsp. orange extract -or- 2 tbsp. grated orange rind -or- 3 tbsp. Tang

For bread; bake 50 to 60 minutes at 350°F in 2 greased and floured loaf pans.

For cupcakes; bake at 350°F for 20 to 30 minutes in muffin pan with paper liners.

Put all ingredients in large bowl and mix well. Pour into pans. Kids can help by mixing ingredients and scooping into muffin pans. Note: I usually use the orange extract and it turns out great.

Skip the orange extract and add cinnamon. You can also use applesauce for half of the oil.
