LOW FAT ZUCCHINI BREAD 
3 eggs (whites only)
2 c. sugar
2 c. grated zucchini
3 tsp. vanilla
1 c. olive oil
1/2 tsp. salt
1 tsp. baking soda
2 tsp. baking powder
3 c. flour
2 tsp. cinnamon

Mix egg whites and sugar, then add all the other ingredients. Divide into two bread pans which have been sprayed with any cooking spray. Bake 50 to 60 minutes at 350 degrees.

I made this recipe because it looked like the easiest out of all those I looked at. It turned out WONDERFULLY! I divided it into one bread pan and one 12 count muffin pan. The muffins were obviously done first (at 25 minutes) and the bread needed to stay in for the full 50 minutes. These are SO MOIST and DELICIOUS!

Changes I made: used whole-wheat flour, slightly less sugar, slightly more zucchini, added 1/4 cup chopped walnuts.

Great recipe! I substituted applesauce for the cup of oil, and put in just one or two teaspoons of oil. I also added some chocolate chips :) Turned out great!

This was good! I cut the sugar in half, used applesauce instead of oil (a little more than a cup), whole wheat flour instead of white, and did 50/50 carrot/zucchini. The only thing I think it could use next time is more spice - I am thinking some nutmeg and more cinnamon perhaps....
