PUMPKIN BREAD (LOW FAT) 
2 c. canned pumpkin
1 1/4 c. sugar
1 c. applesauce
2/3 c. water
2 eggs
2 egg whites
2 c. whole wheat flour
1 1/2 c. all-purpose flour
2 tsp. baking soda
1 1/2 tsp. nutmeg
1/2 tsp. ginger
1 1/2 tsp. cinnamon

In a large bowl, blend pumpkin, sugar, applesauce, water, eggs and egg whites. Add flours, baking soda, nutmeg, ginger and cinnamon. Blend at low speed until moistened, then beat 1 minute at medium speed.

Pour batter into 2 non-stick sprayed and floured (bottom only) loaf pans (9x5 inch).

Bake at 375°F until a toothpick inserted in center of bread comes out clean (about 45-55 minutes).

Cool 5 minutes and remove from pans.

Cool completely on wire rack.

This bread was not flavorful. It was quite bland and I think it needed more spices. I did try it 20 min., after it came out of the oven. So maybe tomorrow it will taste better.
