WONDERFUL LOW-FAT BANANA BREAD
2 1/4 cups all-purpose flour
1 2/3 cups sugar
1 tsp. salt
1 1/4 tsp. baking powder
1 1/4 tsp. baking soda
2/3 cup milk (I use skim)
1/2 cup plain yogurt (I use non-fat)
2 tbsp. vegetable oil
2/3 cup egg whites (I use Egg Beaters)
1 1/4 cups mashed ripe bananas
2/3 cup chopped nuts

Heat oven to 350°F. Prepare two (7x3-inch) loaf pans with non-stick cooking spray (Pam).

Measure all ingredients into large mixer bowl and blend 1/2 minutes on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into two pans.

Bake at 350°F for 50 to 60 minutes or until wooden pick inserted in center comes out clean.

Makes 2 loaves.

I added 1/2 cup of apple sauce and made both a loaf and muffins. Very tasty!

Thank you Sandy. I also added 1/2 cup natural apple sauce to make muffins. Before adding the chopped nuts,I divided the batter in half . To 1/2 of the batter I added 1/3 cup chopped nuts; to the other half I added 1/3 cup mini chocolate chips then baked in muffin pans. Moist and delicious.

Did you add applesauce as another ingredient or did you substitute applesauce for the oil?

I substituted Splenda for the sugar and applesauce for the oil... so it was even lower calories than the original recipe. Will make this recipe again! Very easy even my daughters assisted with this recipe!

I LOVE this recipe! Used fat free plain vanilla yogurt as I didn't want to buy the whole big container of plain... Very moist and not too sweet!

Great flavor. A little spongy, probably due to the low fat content, so I think I will also try adding some apple sauce next time. Will definitely make again!

This was the first time we made banana bread and we loved it! We chose this recipe because of the great comments on here (we did add the applesauce, so I can't judge how it is without it). We even got the thumbs up from my mom, who is very particular about the kind of banana bread she likes. By the way, in case anyone wants to know, we sliced each loaf into 12 slices, with each slice being 3 Weight Watchers points (using 1 percent milk, no sugar added applesauce, and pecans for the chopped nuts).

This was so good! I nixed the nuts, used only 1/3 cup sugar and lite vanilla yogurt and 3 bananas and it was so sweet and delicious! Thanks for sharing!
