WONDERFUL LOW-FAT BANANA BREAD | |
2 1/4 cups all-purpose flour 1 2/3 cups sugar 1 tsp. salt 1 1/4 tsp. baking powder 1 1/4 tsp. baking soda 2/3 cup milk (I use skim) 1/2 cup plain yogurt (I use non-fat) 2 tbsp. vegetable oil 2/3 cup egg whites (I use Egg Beaters) 1 1/4 cups mashed ripe bananas 2/3 cup chopped nuts Heat oven to 350°F. Prepare two (7x3-inch) loaf pans with non-stick cooking spray (Pam). Measure all ingredients into large mixer bowl and blend 1/2 minutes on low speed, scraping bowl constantly. Beat 3 minutes on high and pour into two pans. Bake at 350°F for 50 to 60 minutes or until wooden pick inserted in center comes out clean. Makes 2 loaves. |
