CEIL'S EASY ZUCCHINI PIE 
3 cups zucchini
1 small onion, chopped
1 cup Bisquick
4 eggs, beaten
1/2 cup grated Parmesan cheese
1/2 cup olive oil
1 tsp. parsley
1/2 tsp. salt
1/4 tsp. pepper
1/2 cup Muenster cheese, diced (5 3-inch slices)

Add ALL ingredients into a large bowl and MIX. Pour into a greased pie-dish. Bake in a 400°F oven for 50 minutes. ENJOY!
