HAM AND MUSHROOM QUICHE 
9-inch unbaked pie shell
6 eggs, beaten
1 c. shredded Swiss cheese
1 c. chopped ham
1 (4 oz.) can sliced mushrooms, drained
1 c. Half & Half
2 tbsp. minced onion
1/2 tsp. salt
1/2 tsp. dry mustard
1/4 tsp. pepper

Brush pie shell with a little of the beaten eggs. Prick the bottom and sides of the pastry with a fork, bake it in a preheated 450 degree oven for 5 minutes, or until the crust turns a light golden brown. Set pie shell aside, reduce oven temperature to 375 degrees. Stir together cheese, ham, and mushrooms before arranging the mixture evenly in the bottom of the shell. Add remaining ingredients to the beaten eggs, and pour this over the cheese mixture. Bake the pie in the preheated 375 degree oven for 30 to 35 minutes, or until a knife inserted in the center comes out clean. Let it stand 5 minutes before serving. Makes 4 to 5 servings.
