BREAKFAST CASSEROLE 
1 (12 oz.) pkg. hash browns
1 lb. sausage
1/2 c. onion
1/2 c. chopped green peppers
1 (4 oz.) can mushrooms, drained
8 eggs, beaten
1 (6 oz.) pkg. Cheddar cheese, grated
Salt and pepper to taste

Spread hash browns on bottom of greased 9 x 13 inch pan. Saute sausage, onion, green peppers, and mushrooms. Combine eggs, salt, and pepper. Add sausage mixture. Pour over potatoes. Sprinkle cheese over top. Refrigerate overnight. Bake at 350 degrees for 45 minutes or until done.

Am trying to figure a way to do this on stove top. Electricity in my area is SO high now, I have cut back on baking. Any idea's ?

I would cook the hash browns in a large skillet. Place the cooked meat mixture on the hash browns then add the eggs. Cook on low temp with a lid on the skillet until the eggs are firm. Turn off the heat and add cheese and let sit until the cheese melts then serve. I make a casserole like this often using different meats and sometimes just fried potatoes instead of hash browns.

You could also prepare as above, but as the eggs get close to finished, slide the whole frypan in the oven on BROIL for about 3 minutes...Like you would finish a fritatta...yummy.
