CHRISTINE'S CHICKEN CORDON BLEU | |
1 lb. deli sliced ham (thickness is your preference) approx. 1/2 lb. Swiss cheese (or 1-2 slices per chicken) 2 lb. boneless chicken breasts (thin or pounded thin) breadcrumbs eggs oil toothpicks Pound the chicken to thin cutlets. Take a few slices of ham and a slice or two of Swiss cheese and lay on top. Roll the chicken up with the ingredients inside (it will be sticking out a little on the sides). Dip the roll into the egg coating it lightly. Take the roll and coat with the breadcrumbs. Thinly coat a glass Pyrex baking pan or metal pan with oil. Line up the Chicken Cordon Bleu rolls. Bake for approx at 375/400°F for 15 to 25 minutes (or until the chicken is cooked through) Note: Also, a great addition is to add a small piece of Swiss on the top of each chicken!
