BAKED HERBED TOMATOES 
4 med. fresh tomatoes
Salt
1 lg. shallot, minced
1 lg. clove garlic, minced
1/2 tsp. anchovy paste
2 tbsp. butter, melted
2 tbsp. finely chopped fresh parsley
2 tbsp. finely chopped fresh basil
1 tsp. chopped fresh thyme OR
1/4 tsp. dried thyme
1 c. fresh bread crumbs
Freshly ground black pepper

Cut tomatoes in half crosswise. Gently squeeze out the seeds. Sprinkle each half with salt and turn upside down on paper towels. Let stand 30 minutes. Preheat the oven to 400 degrees. Mash the shallot with garlic and anchovies paste in medium bowl. Stir in butter, the herbs and bread crumbs. Mix well. Spoon the crumb mixture onto each tomato half, packing down the mixture with spoon. Sprinkle with pepper. Bake 10 minutes, then place under broiler until lightly browned. Serve hot or cold. Sprinkle with vinegar and oil. Serves 4.
