15 (1/2-inch thick) tomato slices Vegetable cooking spray 1/3 c. Italian-seasoned bread crumbs 2 tbsp. grated Parmesan cheese 1/4 tsp. dried whole basil 1 tbsp. reduced-calorie butter, melted Fresh basil sprigs (optional) Arrange tomato slices in a 13 x 9 x 2-inch baking dish coated with cooking spray; set aside. Combine bread crumbs and next 3 ingredients; mix well. Sprinkle evenly over tomato slices. Bake at 350 degrees for 20-25 minutes. Garnish with basil sprigs if desired. Yield: 5 servings (71 calories per 3-slice serving). 2.9 grams protein, 2.6 grams fat, 10.3 grams cholesterol, 28- milligrams sodium, and 44 milligrams calcium. |
