HERB - STUFFED TOMATOES 
4 med. tomatoes
1/4 c. finely chopped green bell pepper
2 tbsp. finely chopped onion
2 garlic cloves, minced
1/2 tsp. each dried basil and savory
1/2 tsp. salt
1/8 tsp. dried thyme
1/8 tsp. pepper
6 tbsp. plain, dried bread crumbs
1 tbsp. chopped fresh parsley

Cut tomatoes in half; squeeze out and discard seeds. Scoop out pulp; chop and place in medium bowl. Stir in green pepper, onion, garlic, basil, savory, salt, thyme, and pepper. Add bread crumbs; stir until thoroughly combined. Spoon into tomato halves. Sprinkle tops with parsley. Place in a circle on plate and cover with wax paper. Microwave on medium 10 minutes rearranging tomatoes halfway through cooking. Let stand 2 minutes. Makes 4 servings. 67 calories, 3gm protein, 1gm fat, 14gm carbohydrates, 353mg sodium.
