BANANA BREAD (SOFT AND MOIST) 
1/2 cup (1 stick) butter
2 eggs
1 cup white sugar
1 tsp. vanilla extract
1 cup ripe mashed bananas
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
1 1/2 cups sifted all-purpose flour
1/2 cup chopped walnuts (optional)

Preheat oven to 350°F.

Mix: butter, eggs, sugar, vanilla in a bowl and mix until creamy.

Add: bananas, cinnamon and mix well.

Add: baking soda, salt, sour cream, flour, mix until all smooth.

Pour into a greased and floured loaf pan.

Bake at 350°F for 1 hour or until done.

I substituted whole wheat flour, as it was all I had, which can sometimes cause bread to be dry, but this recipe was still nice and moist! I also had no sour cream, so I used 1 tbsp. white vinegar plus milk to make 1/2 cup liquid. This is a useful in a pinch when you have no sour cream.

Very good and moist, I didn't like the idea of sour cream (not a big fan) so I used my sons baby food bananas! It kept it very moist and kept the banana flavor as well!! I cant wait to make it again for my family for Christmas!

Just tried the recipe. Excellent. It was very moist. I doubled the recipe because I had so many ripe bananas. I put one batch in a loaf pan which I cooked for 55 minutes and the other in a fluted pan for 45 minutes. My husband absolutely loved it! This will be my banana bread recipe from now on. WOW! This is a great banana bread. I used 100% whole wheat flour (sifted) and Almond Milk to replace the sour cream and the flavor and texture was moist and delicious, even the next day it was moist. My favorite banana bread from now on!

This is my go to banana bread recipe! I make sure the bananas are almost black- more flavor. I also spray pans with Vegetable Oil Spray and dust with sugar instead of flour. Makes an outside crust that is yummy! Always have requests for the recipe.
