RED VELVET CAKE 
2 1/2 c. sifted plain flour
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. cocoa
1 c. buttermilk
1 1/2 c. cooking oil
1 tsp. vinegar
2 eggs
1 oz. red food coloring
1 tsp. vanilla extract

Sift together the flour, sugar, soda and cocoa. Add the remaining ingredients in the order listed above. Bake for approximately 30 minutes at 350 degrees in 2 (9") well greased pans.

CREAM CHEESE FROSTING:

8 oz. cream cheese
1 lb. box confectionery sugar, sifted
1/2 stick butter
1/4 c. milk
1/2 - 1 c. chopped pecans

Mix cream cheese and butter together in a small bowl. Add sugar and milk and stir until mixture is smooth. Add pecans. Frost layers when cool.

Cream cheese and butter should be allowed to sit at room temperature to allow them to soften.
