DIANA'S RED VELVET CAKE 
1 1/2 c. sugar
1/2 c. shortening
2 eggs
2 1/2 c. flour
2 oz. red food color
1 1/4 c. buttermilk
1 tsp. vanilla
1 tsp. salt
2 tbsp. cocoa
1 1/2 tsp. baking soda
1 tbsp. vinegar

Cream sugar, shortening, vanilla, and eggs. Make a paste of cocoa and food coloring and add to sugar mixture. Add salt to flour and add with buttermilk to sugar mixture. Add soda to vinegar in small bowl. Fold soda mixture in sugar mixture. Bake at 350 degrees for about 30 minutes.

ICING:

1 (1 lb.) box powdered sugar
8 oz. cream cheese, softened
3/4 stick butter, softened
1 tsp. vanilla

Beat cream cheese and butter together until smooth. Add sugar and vanilla; beat until smooth. Frost cooled cake.
