RED VELVET CAKE 
1/2 c. shortening
1 1/2 c. sugar
1/4 c. red food coloring
1 tbsp. cocoa
2 c. cake flour
1/2 tsp. salt
1 c. buttermilk
1 tsp. vanilla
1 tbsp. white vinegar
1 tsp. baking soda
2 eggs

ICING:

1 lb. powdered sugar
8 oz. cream cheese
1 stick butter
1 tsp. vanilla

Cream shortening and sugar; add eggs one at a time, beating well. Mix food coloring and cocoa together and add to cream mixture, blending well. Combine buttermilk and vanilla; add flour and salt alternating with buttermilk and vanilla. Combine vinegar and soda; add to mixture while still foaming.

Bake in a 9x13 inch greased and floured pan at 350 degrees for 35 minutes. Cool on wire rack.

CREAM CHEESE ICING: In medium size mixing bowl beat together powdered sugar, cream cheese, butter and vanilla. Spread on cooled cake.
