CHICKEN & GRAPE SALAD 
1 lb. skinless, boneless white chicken
1/2 c. low-fat sour cream
1/2 c. non-fat plain yogurt
1/2 c. light mayonnaise
2 tbsp. poppyseeds
Coarse black pepper & salt to taste
Chicken stock
1 c. diced celery
1/4 roasted pecans
1 1/2 c. seedless grapes, red or white

Poach chicken until tender, in enough stock to cover. Cool, dice and set aside.

In mixing bowl, blend sour cream, yogurt and mayonnaise. Add the chicken, grapes, celery, pecans and poppyseeds. Season with pepper and salt to taste. Chill. Serves 4.
