CHEESE & BACON FRITTATA | |
6-8 lg. eggs 1 c. milk 1 green onion, minced 2 tbsp. butter 1 c. grated cheese (Monterey Jack & cheddar) 1/2 tsp. salt 1/8 tsp. pepper 1/2 lb. cooked, crumbled bacon Unbaked pie crust Preheat oven to 400 degrees. In medium bowl with wire whisk or hand beater mix eggs, milk, green onion, butter, salt and pepper until well blended. Mix in bacon. Pour into pie crust in 10" pie pan or quiche pan. Sprinkle cheese evenly over top. Bake 20 to 25 minutes until golden brown and set. If pie crust gets brown too fast, tear strip of foil and place around edge of pan until done. Serves 6. Can also be cooked without pie crust in greased 10 1/2" round au gratin or 9"x9" baking pan. |
