CHEESE, BROCCOLI, ONION AND
BACON SOUP
 
1 pkg. frozen broccoli
1/4 lb. Velveeta cheese
1/2 lb. crisp bacon
1/2 c. chopped onion
1 pt. half and half cream
1 can cream of celery soup
1 can cream of mushroom soup

Cover broccoli with water and boil until tender. Drain then add soup (undiluted) fry up bacon. Chop into pieces fry onion in bacon grease until transparent. Cut up cheese into cubes and add to soup. Add onion, bacon, and a little grease. Then add half and half cream. Simmer until cheese melted and all ingredients mixed well. Eat.

I'll be trying this recipe soon sans mushroom. It's close to what I just made, but with cheese, and fresh onions (instead of my fried onions).

Any ideas for an alternative cheese. Velvetta is good but might be too salty for me. Something low salt or oil. There's enough in the soup and Bacon.

I just made this soup today for the first time. It was very easy, very creamy, and very tasty. I added pepper and about another 6 ozs. of cheese and 1 can of chicken broth. Everyone loved it!! This will definitely be my 'go to soup' for the up coming cold season
