EASY BROCCOLI AND BACON SOUP 
5-6 pieces bacon
1 onion
3-4 celery sticks
1-2 heads of Broccoli
2-3 cups cheese (or Velveeta can be used, too)
2-3 bouillon cubes or 2 cans chicken broth
Salt and Pepper, to taste
Italian seasoning, parsley or whatever you like

Note: No milk is needed for this broccoli soup.

Cook bacon (don't discard drippings).

While cooking bacon, chop vegetables. Transfer about half of bacon drippings to a large pot.

Sauté onion and celery in bacon drippings until slightly browned. Crumble/chop the bacon. Add about 8 cups of water and bouillon or chicken broth. Add broccoli and bacon. Add seasonings (to your taste).

Boil on medium heat for about 30 minutes, stirring occasionally. Add cheese and cook on medium-low for 10 to 15 minutes longer, stirring every few minutes.
