BROCCOLI, CAULIFLOWER, AND
CHEDDAR SOUP
 
4 chicken or vegetable broth
1/2 or whole onion
10 oz. frozen broccoli
10 oz. frozen cauliflower
1 sm. potato, diced
4 oz. cheddar
1/2 c. milk
Salt and pepper

Bring broth, onion, broccoli, cauliflower, and potato to a boil in a 4 quart saucepan. Reduce heat, cook covered, 10 minutes. Remove 1 cup plus broccoli and cauliflower pieces, set aside. Cook soup 10 minutes longer. Chop cheese into blender, add milk. Ladle in a small amount of vegetable broth. Puree until very smooth. Pour into large bowl and continue to puree broth until done. (Beware - it's hot!) Return pureed soup to pan with reserved vegetables and heat through, but do not boil or cheese will curdle. Add salt and pepper.

Great quick soup. Only I used bouillon cubes for the broth with 4 cups of water. I used a fresh head of broccoli and half a head of cauliflower (because it was in the fridge). I also only removed 1 cup of broth after veggies were soft and put aside, then I removed the pot from heat and used a hand blender to puree... Then added the finely grated cheese and milk while it was off heat. Added a little of the broth I put aside to thin it out a bit.

Turned out great. No extra salt was needed because the cubes and the cheese are salty enough. My whole family (even my 1 year old) loved it.

Love this soup. I sauteed the onion in 1 tbsp. olive oil first and then followed the recipe using cut up fresh broccoli and cauliflower instead of frozen. When I served it up I added a dollop of sour cream and a sprinkle of curry powder with a touch of fresh parsley. I also served with warmed pita bread and a salad.

I also omitted the salt and pepper and substituted a sprinkle of Mrs. Dash in the blender instead. Family loved it!

Just made this soup, used slightly more chicken broth than called for, and more cheese...turned out great. Added a clove of garlic and generous pepper and a just a touch of salt.

Followed the other reviews with fresh cauliflower and broccoli and cooked my onions first. Awesome flavor! Can't wait to eat the leftovers as I am sure it will be even tastier!

Love it!!! Made it more of a cream soup since I have smaller children that if they see it they might not eat. It but over all excellent delicious and nutritious.
