HERB-BAKED FISH & RICE 
1 1/2 c. hot herb or chicken bouillon
1/2 c. uncooked reg. rice
1/4 tsp. Italian seasoning
1/4 tsp. garlic powder
1 pkg. (10 oz.) frozen chopped broccoli, thawed & drained
1 can (2.8 oz.) French fried onions
1 tbsp. grated Parmesan cheese
1 lb. unbreaded fish fillets, thawed if frozen
Paprika (opt.)
1/2 c. (2 oz.) shredded cheddar cheese

Preheat oven to 375 degrees. In 8 x 12 inch baking dish, combine hot bouillon, uncooked rice and seasoning. Bake, covered, at 375 degrees for 10 minutes. Top with broccoli, 1/2 can French fried onions and the Parmesan cheese. Place fish fillets diagonally down center of dish; sprinkle fish lightly with paprika.

Bake covered at 375 degrees for 20 to 25 minutes or until fish flakes easily with fork. Stir rice. Top with cheddar cheese and remaining onions; bake, uncovered, 3 minutes or until onions are golden brown. Preparation time: 10 minutes. Makes 3 to 4 servings.

This dish is so good..Extremely tasty! My family loved it. We cleaned the Pyrex! I made a couple alterations due to the ingrediants I had.
I used extra bouillon, fresh itialian spices, jasmine rice, and fresh asparigus...Oh and garlic, cheddar crispy onions (in produce section at frys) This is one of those great recipes you can totally play with. Thank you for sharing.

I tried this last night with Mahi mahi and everybody wanted seconds. I should have let the filets get to room temperature before I put them on the rice and it increased the cooking time by ten minutes. Next time, I'll add the ten minutes at the beginning.
