CREAMY RICE PUDDING 
3/4 c. rice
1 qt. water
1 tsp. salt
1 qt. and 1 c. milk
3/4 c. sugar
2 eggs
1 tsp. vanilla
1 c. milk
1 c. raisins (optional)

In a large pot, bring 1 quart of water, 1 teaspoon salt to a boil. Add 3/4 cup of rice. Cook rice until water boils out. Then add 1 quart and 1 cup of milk and 3/4 cup of sugar. Cook slowly until thick. Then add 2 eggs (beaten), 1 teaspoon vanilla, 1 cup of milk. Take off of heat as soon as this thickens. Keep stirring so rice does not burn on bottom. Add raisins.

Grease casserole dish lightly with butter. Pour rice pudding into dish and sprinkle with ground cinnamon. Let cool, then refrigerate.
