GERMAN SPINACH FILLED PANCAKES 
1 c. Bisquick
1 egg
3/4 c. milk
10 oz. pkg. frozen spinach, cooked, drained
2 tbsp. butter
Dash salt, pepper and nutmeg
1/2 c. evaporated milk
1 c. shredded Swiss cheese

Combine Bisquick, egg and milk. Make pancakes using 1/3 cup batter for each. Thin batter if necessary. Mix cooked spinach, butter, salt, pepper, and nutmeg. Spread some spinach on each pancake and roll up. Place in greased 11 x 7 inch baking dish. Heat evaporated milk. Stir in cheese and stir constantly until melted. Pour over pancake rolls. Bake at 400 degrees for 8-10 minutes or until lightly browned. Serves 6.
