SAUCY TURKEY AND SPINACH FILLED
PASTA SHELLS
 
1 lb. jumbo pasta shells, cooked & drained
1 (1 1/4 lbs.) pkg. fresh ground turkey
2 tbsp. butter
1 med. onion, chopped
2 cloves garlic, finely chopped
2 (10 oz.) pkgs. Frozen chopped spinach, thawed & well drained
1 c. fine dry bread crumbs
4 slightly beaten eggs
1/2 c. light cream
1 c. grated Parmesan cheese, divided
3/4 tsp. ground nutmeg
1/4 tsp. ground oregano
1 (32 oz.) jar spaghetti sauce
2 c. shredded Mozzarella cheese

Heat oven to 350 degrees. Grease rectangular baking dish, 13"x9"x2". Heat butter in large skillet over medium-high heat until melted. Crumble turkey into skillet. Cook turkey, onion and garlic until turkey is no longer pink; drain. Stir spinach, bread crumbs, eggs, cream, 2/3 cup Parmesan cheese, nutmeg and oregano. Salt and pepper to taste.

Fill shells with turkey mixture. Arrange in dish; pour spaghetti sauce over shells. Bake 20 minutes; sprinkle with Mozzarella cheese and remaining Parmesan cheese. Bake until cheese is melted and sauce is bubbly, about 20 minutes longer. 8 servings.
