SOUTHERN POTATO SOUP 
potatoes, boiled and drained (3-4 lbs.)
1/2 pack bacon (6-8 oz), fried
1 large onion, chopped
1/2 gallon whole milk
3 tablespoons cornstarch (optional)

Boil potatoes, drain and rinse under water - fry bacon in the pot you plan to cook soup in. Remove bacon, set aside and add onion. Cook until tender. Pour in milk.

If you want a thicker soup, add 3 tablespoons of cornstarch in a separate container, combine with cold milk and stir until thick, then and add the rest of the milk.

This is great with Jiffy sweet cornbread.

Hi Yvonne,

For the amount of milk and bacon in this recipe use 3 or 4 lbs. potatoes; all the quantities are adjustable according to how much you'd like to make. Taste and adjust seasonings, adding leeks, shallots, minced garlic, parsley, salt, pepper, just a pinch of onion and garlic powder as desired for extra flavor (any or all). Chicken stock is also a nice addition in place of some of the milk; top off with a pat of butter!

I live in the South. I peel amount of potatoes according to number of guests or family will eat. I cover cubed potatoes with water or chicken broth, add chopped onion while they are boiling add butter to taste or bacon drippings, salt and pepper I never waste the potato liquid if anything I may add little more hot water. When potatoes are done I make a 3/4 cup milk and enough flour to thicken the soup or you can use corn starch as directed. This is plain potato soup if you wish you can add amount of carrots, green peas, celery for your taste. With hot biscuits or cornbread, Honey this is Southern good eating Potato soup. Don't pour that liquid out it has good nutritious value in it plus taste.
