RICE PILAF 
1 c. long grain brown rice
3 tbsp. shortening
1 sm. chopped onion
2 med. tomatoes, peeled and diced
10 oz. consomme
1 1/4 c. water
1 tsp. salt
1/2 tsp. pepper

Brown rice and onion in shortening. Add other ingredients. Cover to bring to boil, then simmer 1 1/2 hours or until liquid is gone.
