RICE PILAF 
1 stick butter
1/2 c. green onions, chopped
1 clove garlic, pressed
1/2 lb. mushrooms, chopped coarse
1 c. tomatoes, crushed
1 tsp. salt
1/4 tsp. pepper
1 lb. long grain rice
2 1/4 c. beef or chicken broth, hot
1/2 c. green pepper, chopped

Melt butter and saute' onion, pepper, garlic and mushrooms. When done, add rice, salt, pepper and broth. Bring to a boil, cover and simmer about 1 hour. Remove from heat, leave covered and let stand about 25 minutes.
