CRAB FLAVORED SEAFOOD CAKES 
3 tbsp. mayonnaise
1 tbsp. lemon juice
1/2 tsp. hot pepper sauce
2 tbsp. finely chopped celery
1 lb. crab flavored seafood well flaked & lightly chopped
2 lg. eggs, beaten
1/2 tsp. dry mustard
3 tbsp. finely chopped parsley
1 tbsp. finely chopped onion
2 c. fresh whole wheat bread crumbs

Combine mayonnaise, eggs, lemon juice, mustard and hot pepper sauce in large bowl. Stir in parsley, celery and onion. Gently stir in seafood and bread crumbs. Shape into 8-12 patties, 1/2 inch thick.

Coat skillet with vegetable cooking spray. Place over medium-low heat until hot. Add seafood cakes and cook 5 minutes per side or until browned. Serve with lemon wedges.
