NANA'S SPANISH BEAN SOUP | |
6 c. water 1 pkg. Spanish beans (soak overnight) 1 pouch saffron (comes in bean pkg.) 1 bay leaf 1 clove garlic 1 med. onion 1 ham hock 2 chorizo sausage 2-3 med. potatoes (chopped to bite-size) Bring water to a boil and then reduce to medium heat. Dissolve saffron. Add bay leaf, garlic and beans. Cook for approximately 3 hours. Then add onion, hamhock and sausage. Cook for 2 more hours on simmer. Add chopped potatoes and simmer until potatoes are soft. (Approximately 2 more hours - according to size of pieces cut.) Serves 6-8. |
