SPANISH BLACK BEAN SOUP 
1 lb. black beans
1 lg. chopped green pepper
1 lg. chopped onion
6 chopped garlic cloves
1 bay leaf
1 tsp. oregano
1 sm. hot pepper
1 lg. tbsp. vinegar
3/4 c. olive oil
Water to cover black beans
Salt and pepper to taste

In large pot, saute green pepper, onion and garlic in olive oil. Add washed beans and water to cover, then add bay leaf, oregano, hot pepper and vinegar and salt and pepper to taste. Bring to a boil reduce heat and cook on low until done. Serve over cooked white rice.
